Peeves! I miss Peeves so much in the movies! He's not a very important character, but he makes so many scenes so much better than they are without him.
But for a particular scene I could mention the Firebolt/Scabbers feud in PoA. That one's present during the whole year in the book, but there's hardly any mention of it in the movie.
